Saturday Fun With Violet!

My sister and niece are visiting for a little while so Violet spent the day with me.We started out with lunch at the Food Park

She loaded her burger from Fred's (which has been on Diners Drive Ins and Dives) up with mayo and ketchup. 


I decided to have my lunch from the Butcher's Son and had the Santa Fe Sunset (because I can't pass anything up with the words "Santa Fe" in it). It was more than I expected and I have never had anything like it. Yum! The Butcher's Son is my new favorite food truck. I ate every last bite and I have no guilt, seriously.


After the food park we went shopping! Violet is a great little shopper too! She takes after her Aunt Lizzie.I taught her how to buy different pieces of clothing that she can mix and match to make several different outfits. Granddaddy is taking her to the golf tournament tomorrow at the club so we had to make sure she had a few cute new outfits to choose from. We also got her a new pair of converse and some cute little sandals...and a glamorous pair of sunglasses to accessorize her outfits with! 


After a full afternoon of shopping that wore us out we came back to my house and watched the Bee Movie.

Then after a visit over to Mimi and Granddaddy's for dinner, she decided that she wanted to come back over to her Aunt Lizzie and Uncle Fee's house to spend the night. So, we watched a few episodes of Duck Dynasty (which she loves and thinks is hilarious), read the Truffle Hunter, and went to bed!

Happy Things




I love making marshmallows and my mother gave me this great marshmallow cookbook! The recipes are easy and look delicious. I can't wait to make my first batch! This book is most certainly a happy thing!

Favorite Weekend Lunch

I love wraps...of any kind! I also love making them at home on the weekends.Super delicious after a solid hour of working out! Presenting, the Lizzie Wrap!

Ingredients:
Whole Wheat Tortilla or other Wrap
Red Bell Pepper Hummus
Spring Mix Lettuce
Thinly Sliced Bell Pepper
Thinly Sliced Onion (Red or White)
Balsamic Vinaigrette Dressing
Sliced Turkey Meat (Optional)

Lay your wrap/tortilla out on a cutting board or counter.


 Spread with hummus.


Layer with lettuce and sliced bell pepper and onion.


Drizzle balsamic vinaigrette 


Layer with turkey meat. You can leave this off if you are a veggie. Feel free to add additional veggies too!


Now, eat! Yum.

Lovin' Leftovers

I really do enjoy cooking, but I have to admit, during the weekday after I have worked all day I get a bit lazy at it. I tend to make the same, oh...10-12 different recopies over and over again. I do this because I know the recipes by heart and I don't really have to think about it, I can just toss it all together. I do like to plan ahead and make at least one dish that we can use as left overs the next day. Meatloaf is one of those dishes that makes a lot and we can just heat it up the next evening for a quick and easy meal. The thing I love most about meatloaf, is making the leftover loaf into a meatloaf sandwich! Super easy and very tasty! Plus, I still had the wheat bread loaf I made this past weekend. So, here you go.

Butter your bread. I like to use Smart Balance butter...Mr. Lucas prefers otherwise. But since I do the grocery shopping, I win. Then sprinkle with garlic salt. 


Put one slice of bread, butter side down, on the preheated panini grill. Then add cheese of your choice. I used mozzarella. 


I warmed up my meatloaf  first and then placed it on the bread.


Add the condiment of your choice. I used mayo and Mr. Lucas likes ketchup.


Place the second slice of bread, butter side up, on top.


Close the grill and let it get to cooking!


Just a few minutes later, meatloaf sandwich!
